Step vans dominate this category for a reason that has nothing to do with cooking. A walk-in body gives standing headroom the full length of the vehicle, a flat floor low enough to step into without a ladder, and flat side panels that a builder can cut a serving window into. Grumman Olson and Utilimaster bodies on Chevrolet P30, Workhorse P42 and Ford chassis have been the backbone of the industry for decades, and thousands of them are still working long after the parcel fleets that bought them new retired them.

The stain that operators see is the visible part of a chemical process happening under the coating. Repairs in that zone mean removing affected material, neutralising and preparing the surface properly, and refinishing with a coating that will survive the same exposure.

**Serving windows are large moving openings in a structural panel**

A serving window is a big hole cut into a load-bearing side panel, fitted with a hinged or sliding assembly that gets opened and closed at every service and gets leaned on by customers and staff. The opening reduces the shear capacity of that flank, the assembly weighs a surprising amount, and the hinge line takes the whole load. Symptoms start as a window that no longer latches evenly, then a seal that no longer seals, then visible distortion at the opening corners. The repair addresses the opening structure first and the window hardware second.

**These vehicles are almost always heavier than their owners think**

Add a full fresh water tank, a waste tank, propane cylinders, a generator, refrigeration, a flat top, a fryer with oil, and a day of stock, and a step van that started well within its rating is over it. The consequences arrive gradually: sagging rear springs, body mount fatigue, cracked crossmembers, and tyres running hotter than they should. **The wrap is the storefront and it has a service life**

Almost every food truck carries a printed vinyl wrap that is doing the work a shopfront and a sign would do for a fixed restaurant. In California sun that film fades, the laminate chalks, and the edges begin to lift at panel breaks and around rivets. Left too long it becomes brittle, and removal then takes clear coat with it and leaves adhesive that needs chemical work and refinish. Planning a wrap replacement on schedule is cheaper than the paint correction that follows leaving it until it fails.
